1. Crack the Coconut and Remove the Meat

  1. Use a hammer to tap around the “equator” of the coconut until it cracks open.

  2. Pour out the coconut water (save it to drink or use in smoothies).

  3. Pry the meat away from the shell using a butter knife or spoon.

  4. Optional:

    • Bake the coconut halves at 80°C (175°F) for 10–15 minutes to loosen the meat.

    • OR freeze the coconut overnight — the shell separates more easily.

  5. Peel the brown skin if a pure white result is preferred.

2. Grate or Process the Coconut Meat

  • For shredded coconut: use a hand grater to create long, thin strips.

  • For desiccated coconut: pulse the coconut in a food processor until fine and crumb-like.

3. Dry the Coconut (for Desiccated Coconut)

Oven Drying

  • Spread the coconut evenly on a baking tray.

  • Dry at 60°C (140°F) for about 45–60 minutes, stirring halfway.

  • The coconut should be fully dry but not toasted.

Dehydrator Method

  • Spread the coconut on dehydrator trays.

  • Dry at 40°C (105°F) for 4–6 hours.

Air-Drying (if weather permits)

  • Spread on a tray in a sunny, airy spot.

  • Cover with mesh and dry for 1–2 days. Avoid high temperatures — they can brown the coconut and alter the flavor.

4. Optional: Make Sweetened Coconut

If you prefer sweetened flakes:

  1. Heat ¼ cup water + 4 tsp sugar until dissolved.

  2. Mix the shredded coconut with the syrup.

  3. Spread and dry using the same drying method above.

You can also sweeten after drying by lightly coating the finished flakes.

5. Cool & Store Properly

Once the coconut is fully dry:

  • Let it cool completely.

  • Transfer to an airtight glass jar or sealed pouch.

  • Store in a cool, dry place for up to 2–3 months.

  • For longer storage, keep in the refrigerator or freezer.
